Dinners w/o 1/21:

I was just looking back at my first post in May of 2010.   Gosh – a lot has happened over the past 8 years and can’t believe I have been doing this blog since then – that’s a lot of dinners!  From 2007 to 2010 I remember I had a list of people that I emailed each week with the weekly dinner list before deciding it was easier to just do a blog post.  (I still have all those emails archived!)  I’m glad that I continue to love cooking, eating and meal planning.  🙂

Anyway…  I am loving our bi-weekly Imperfect Produce delivery. If interested in trying it out click here to save $10. This week I had radishes and red onions as part of our delivery so I pickled them (and of course my kids were being a bit over dramatic over the vinegar smell….) They are now in the fridge and will last up to 2 months. I love either of these on tacos, sandwiches, burgers and more.

I have a problem with cooking rice – I can never get it right. Either it’s too mushy or not cooked enough. But I found a way! I made a batch of this yesterday and have it in the fridge for dinners this week. I followed the recipe exactly and it not only turned out great but it tastes amazing!

Have you heard about Imperfect Produce? I did some research and besides not only doing great things for the environment, you can save big on your fruits and vegetables. We signed up for the veggie/fruit organic delivery every other week.

Fact: 1 in 5 fruits and veggies grown in the U.S. don’t meet cosmetic standards – the crooked carrot, the curvy cucumber, the undersized apple – usually causing them to go to waste. We’re here to change that.
