Dinners w/o 2/20 & 2/27:

Hey – We just arrived back from our mid-winter break in AZ.  We all had a great time in the sun.

Thursday –

Quinoa made in the rice cooker – using chicken broth to replace water
Skinny green beans tossed in olive oil and s/p and then roasted at 350 for 15-20 min.

Friday –

Saturday –

Grilled ciabatta bread (cut into 1 inch slices, brush both sides with olive oil then sprinkle with salt and pepper– put directly on the BBQ and turn after 1-2 minutes)

Monday –
Pulled pork sandwiches using leftover pork ragu from Saturday night

Carol’s
cannellini beans w/ rosemary & olive oil (New favorite side dish):  1-2 teaspoons of olive oil in a sauté pan w/ a whole rosemary sprig – heat for 2 minutes then add cannellini beans that have been washed/strained for 3-4 minutes) then sprinkle with s/p and take sprig out– I am addicted.  Don’t overcook the beans or they will be mushy!

Friday –
