Dinners w/o 8/4:

This summer has been pretty crazy which means it’s been a ton of dinners not at home.  This week, I am attempting to get our family back on track as far as eating healthy when we are indeed at the house.

Sunday
Grilled salmon:  brush on some good olive oil, sprinkle with salt/pepper, throw on some fresh dill then cover with sliced lemons
Shredded Avocado Kale salad (minus the olive oil and parmesan)  http://www.dinneralovestory.com/six-summer-salads/

Monday–

High
heat cauliflower – have you made this yet?  Trust me – even cauliflower haters eat it up –
Cut up cauliflower in small pieces, toss in olive oil, sprinkle with s/p.  roast at 425 for 15 minutes until browned.  Put in bowl, squeeze lemon over, toss in some feta cheese and toasted slivered or sliced almonds or pine nuts

Tuesday –
Concert in the park – I brought the following to share
Summer quinoa salad
Cook 2 C of quinoa per directions (I find making it in a rice cooker is fluffiest and I also sometimes use chicken broth instead of water)
2 green onions, chopped
A handful of cilantro, chopped
1/2 yellow pepper, chopped
1/2 C grape tomatoes quartered
1/2 English cucumber, chopped
Add all the veggies in a bowl and squeeze the juice of 1/2 a lemon on everything. Add salt and pepper to taste (I go a little heavier since the quinoa is very bland).
Mix the quinoa into the veggie mixture and gently toss. Top with feta or goat cheese crumbles

Wednesday –
Grilled pork tenderloin –  mix a bit of olive oil, soy sauce, a chopped garlic clove and some fresh rosemary together – throw the pork in for a few hours then grill – sounds random but very flavorful and good.
Grilled green beans and zucchini – drizzle with a bit of olive oil, salt/pepper and throw in a grill basket while the pork is cooking

Steamed
rice
