Kari’s Corn salad
Steamed corn cut off the cob – 4-6 ears depending on size
1 can organic black beans, rinsed and drained
1/2 yellow pepper, chopped
1/2 orange pepper, chopped
1/2 large cucumber, seeds cut out and chopped
1 bulb green onion, chopped
1/4 C feta cut into chunks
S&P

Dressing
Juice of 2 limes
About 2-3 Tbsp white balsamic vinegar
About 1 Tbsp agave nectar
About 1 Tbsp extra virgin olive oil

Toss everything together and refrigerate, may need to adjust dressing ingredients to taste.
Other ingredients to add – cilantro, cherry tomatoes, celery….I also like to serve it with fresh avocado on top as a garnish.
