Dinners w/o 5/6:

Sunday
BBQ pork ribs with Trader Joe’s BBQ Sauce
Grilled corn on the cobb
Green salad with balsamic lime dressing

  • Balsamic & Lime Vinaigrette:
  • 2tablespoonsbalsamic vinegar
  • 2tablespoonslight agave nectar (or      honey)
  • 1tablespoonsfresh lime juice
  • 6tablespoonsolive oil
  • Coarse salt
  • Freshly ground black pepper

Monday–  
Ivy chopped salad with dressing from Sunday night – sooo delish!  (I used asparagus instead of the zucchini because that is what I had on hand and deleted the beets) http://www.self.com/fooddiet/recipes/2011/05/gwyneth-paltrows-ivy-chopped-salad#dressing

Tuesday –

Wednesday – out

Thursday –
Grilled flank steak – seasoned with salt/pepper
Grilled asparagus (drizzle with olive oil, s/p) then cook in grill basket

Friday

Saturday – friends over

Grilled Caesar salad – cut a head of romaine length wise and place on the BBQ – when it’s a bit charred/smoky – take off and chop.  Drizzle with dressing below.
Caesar dressing recipe (stays well in fridge for 2 weeks)
5 garlic cloves minced
1tbls Dijon mustard
3 dashes Worcestershire
3 dashes tobasco
Salt to taste
Good amount of fresh pepper
2 Lemons squeezed
½ cup olive oil
**Food process together

Bob’s famous margarita (makes 1 margarita) – 1 ½ shot of silver Patron tequila, ¾ shot Cointreau, 2 limes juiced, quick squeeze of fresh lemon juice.  Shake and pour over a salt rimmed glass filled to the top of ice.  *Occasionally Bob adds a quick splash of soda water  on top before serving.  Best margarita ever – just ask anyone that has had one 🙂
