Dinners w/o: 3/11

Short week of menus this week!

Sunday- out

Monday –
Spicy grilled shrimp (mix together – soy, lime juice and zest, chopped garlic and ginger, chopped jalapenos, chopped green onions) Marinate for 30 minutes then BBQ
Kids version – marinate shrimp in olive oil, garlic, salt/pepper
Steamed brown rice
Cabbage with hot sauce http://orangette.blogspot.com/2009/01/best-we-can-hope-for.html
Sauteed sugar snap peas – little olive oil in a pan – add the snap peas for 3-5 minutes until bright green – season with salt/pepper

Tuesday –
Grilled chicken (marinate in olive oil, garlic, salt/peppter) then grill on BBQ
Zucchini sauté http://smittenkitchen.com/2007/08/my-favorite-side-dish/
Quinoa made in the rice cooker – using chicken broth to replace water

Wednesday –
Peppered Herb Flank Steak marinade (from Junior League cook book)
o Marinade:
 ¾ cups olive oil
 ½ cup red wine vinegar
 4 garlic cloves minced
 4 green onions chopped
 1 tablespoon ground black pepper
 1 tablespoon fresh thyme or 1 teaspoon dried
 1tablespoon fresh rosemary of 1 teaspoon dried
 1 teaspoon kosher salt
o Cover and refrigerate marinate over flank steaks for several hours or overnight
o Bring steaks to room temp before grilling
Spinach salad

Thur – Sat – No menus
