Grilled chicken breasts with avocado salsa (marinate pounded out chicken breasts in a bit of olive oil, garlic salt and parsley flakes)

Chop tomatoes, jalapenos, cilantro, red onion, avocado, garlic clove, salt/pepper and lime juice.  Mix salsa together and place on top of grilled chicken breast

Simple green salad with lemon vinaigrette

 

Wednesday –

Rosemary Cannellini beans – Strain the beans, add some olive oil and a couple sprigs of rosemary. Turn on simmer for ten minutes (don’t heat very long as they start to fall apart)
