Dinners w/o 11/13:

Sunday –
Steamed brown rice
Roasted broccoli
Teriyaki chicken

Teriyaki Marinade ingredients
• 1 cup soy sauce
• 1 cup water
• 3/4 cup white sugar (I cut this in half)
• 1/4 cup Worcestershire sauce
• 3 tablespoons distilled white vinegar (I used white wine instead)
• 3 tablespoons vegetable oil
• 2 teaspoons garlic powder
• 1 teaspoon grated fresh ginger
Directions: In a medium bowl, mix the soy sauce, water, sugar, Worcestershire sauce, vinegar, oil, onions, garlic powder, and ginger. Stir together until sugar dissolves and pour over chicken for 1-3 hours

Monday – This was SOOO good!


Seared scallops over pea puree with roasted tomatoes
– Defrost Trader Joe’s Wild Jumbo scallops in the fridge. Once defrosted wrap in paper towels to absorb all moisture.
– Drizzle scallops with olive oil, sprinkle with salt and pepper and put a little oilve oil in a fry pan – once hot sear for 1-2 minutes a side

Roasted tomatoes – cook in a small fry pan for 30-45 minutes – just drizzle with olive oil and sprinkled with salt/pepper – cook until they start bursting

Tuesday –

Roasted vegetables (I used whatever we have in the fridge – tonight it was carrots, mushrooms, potatoes, zucchini, broccoli, onion) http://www.food.com/recipe/ina-gartens-oven-roasted-vegetables-363313

Wednesday –
Butternut Squash Soup http://allrecipes.com/recipe/butternut-squash-soup-ii/detail.aspx
Garnish with whipped cream cheese, bacon and chives
Simple salad

Thursday
Ella’s birthday dinner – her meal choice
BBQ ribs
Baked potatoes
“skinny asparagus”
Trophy cupcakes

Friday
Bob/Michele – out of town
