Homemade Caesar dressing and croutons:
1 large lemon, squeezed
2 large cloves garlic, pressed
1 teaspoon fresh black pepper
½ teaspoon salt
¾ teaspoon anchovy paste (optional)
1 teaspoon Worcestershire sauce
2 teaspoons Dijon mustard
2 tablespoons red wine vinegar
¼ cup grated Parmesan cheese
1/3 – 1/2 cup olive oil
Place ingredients in a jar and shake very well. Taste and adjust seasonings as needed.
Croutons: Cube French bread baguette, mix with some olive oil and bake in a 375 degree oven until lightly browned and crisp, approximately 15 minutes. Check to make sure croutons are not getting too brown.
