Summer Salads

Hey everyone!

It’s been awhile – I have really missed cooking and blogging about food. I am just coming out of the fog of my 1st chemo treatment and am getting hungry.

There are a couple food related items I wanted to let you all know about – specifically summer salads.

1.) A really cool site about “clean” eating just soft launched. Just Vittles http://justvittles.com/  will have its official launch is 7.11.11 but please check it out in the meantime. Di, a friend started the site and she also brought our family a wonderful dinner I wanted to share the recipes with you guys.

Summer quinoa salad
Cook 2 C of quinoa per directions (making it in a rice cooker is fluffiest)

2 green onions, chopped
A handful of cilantro, chopped
1/2 yellow pepper, chopped
1/2 C grape tomatoes quartered
1/2 English cucumber, chopped
• Add all the veggies in a bowl and squeeze the juice of 1/2 a lemon on everything. Add salt and pepper to taste (I go a little heavier since the quinoa is very bland).
• Mix the quinoa into the veggie mixture and gently toss. Top with feta or goat cheese crumbles.
** sometimes she also like to add fresh corn and/or sliced black olives.

Chicken breasts marinated overnight in Salt, pepper, garlic powder, dry parsley and olive oil

 

 

 

 

2.) My friend, Brooke shared the most delicious salad – Cantaloupe mozzarella, basil evoo and cracked pepper. Brooke just got back from Paris at her 2nd stint at the Le Cordon Bleu cooking school http://www.cordonbleu.edu / and is probably the one person who takes more pictures of her food than I do. Doesn’t this look so yummy and easy?
