Best Banana Bread!

Today my friend Jen brought over a banana bread for us. It was the best banana bread I had ever had so I asked for her recipe – here it is! And thanks Jen!

Jen’s Banana Bread

3 medium size VERY ripe bananas (almost black on the outside!)
1 cup sugar
3 tsp baking soda
dash salt
2 eggs
1/4 canola oil
1 1/2 cup flour
1/2 cup sour milk (make by adding 1 tsp lemon juice to the 1/2 cup milk)

In Cuisinart, process bananas until pureed, 15-20 seconds.
Add sugar, baking soda, and salt and process for 30 seconds.
Add eggs & oil and process until blended, about 10 seconds
Pour flour over, then add sour milk. Process 8 – 10 seconds longer until smooth.
Line 9″ x 5″ loaf pan with aluminum foil. Pour in batter.
Bake on middle rack (I put a cookie sheet on a lower rack just in case any drips out) of oven at 275 degrees for 2 1/2 hours.

Makes 1 loaf
