Dinners w/o 12/12:

Note:  if you didn’t make the sausage risotto dish from last week – I highly recommend.  Try it out!

Sunday – Holiday dinner at the in-laws! They are serving one of our favorite beef tenderloin dishes that has an Asian flare from Hugh Carpenter http://www.hughcarpenter.com/
Chinois Beef Tenderloin (serves 4)
1 piece of beef tenderloin (1 ½ – 2 lbs)
Combine in a bowl:
1 ¼ cup hoisin sauce
¾ cup red wine
½ cup olive oil
½ cup Dijon mustard
2 tablespoons soy sauce
1 tablespoon Asian chile sauce (we use siracha)
12 cloves garlic minced
½ cup rosemary needles minced
Marinate for at least 1 hour up to 8 hours
Grill, slice and serve (do not overcook!!!)
I am in charge of apps so bringing steamed edamame sprinkled with kosher salt and Vietnamese summer fresh rolls with peanut dipping sauce
Summer rolls:
Rice paper wrappers (dipped in hot water to soften for 30 seconds)
Fill wrappers with:
Poached shrimp sliced thin
Brown rice
Cucumber sticks sliced thin
Carrot sticks sliced then
Chopped peanuts
Couple dabs of soy sauce
Don’t overfill them – just a tiny bit of everything
Roll them up, slice in half on the diagonal and serve with your favorite peanut sauce for dipping

Monday –

It takes 3 hours to simmer so I may make on Sunday during the day and then reheat Monday after work

Tuesday –
BBQ chicken sandwiches in the crock pot
Toss raw chicken breasts in the crock pot add ½ cup or so of water then pour your favorite BBQ sauce on top
Cook on low for 4-5 hours
When done shred chicken with a fork and add more sauce if needed

    I was wondering if you had a good idea for a dinner I could bring to my friend who just had a baby. Usually I’d do something like lasagna (that they could throw in the oven), but they requested something healthier. Thanks!
