Dinners w/o 11/28

Sunday –
Simple salad with greens, blue cheese, sliced pear, a bit of balsamic and olive oil drizzled over
Fresh linguini from Cucina Fresca http://cucinafresca.com/  with clams
• Wash then steam clams with lid on in a ½ cup of white wine
• Separately sauté thinly sliced onion, fresh chopped garlic, red pepper flakes
• Combine clams and sauce left in pan,, sauteed garlic-onion mixture with fresh noodles then add a lot of parmesan and chopped parsley, salt/pepper
Kids don’t like clams so I just save some linguini noodles and toss with butter

Monday –

Tuesday –

Wednesday –

Carol’s cannellini beans w/ rosemary & olive oil
1. 1-2 teaspoons of olive oil in a sauté pan w/ a whole rosemary sprig – heat for 2 minutes
2. then add cannellini beans that have been washed/strained and warm for 3-5 minutes
3. then sprinkle with s/p and take sprig out– I am addicted. Don’t over warm the beans or they will be mushy!
