Dinners w/o 11/14:

Sunday
Skirt steak salad with blue cheese (we use flanksteak instead – more lean)  http://smittenkitchen.com/2010/09/skirt-steak-salad-with-arugula-and-blue-cheese/
Grilled ciabatta bread (cut into 1 inch slices, brush both sides with olive oil then sprinkle with salt and pepper– put directly on the BBQ and turn after 1-2 minutes)

Monday
BBQ chicken sandwiches in the crock pot
Toss raw chicken breasts in the crock pot add ½ cup or so of water then pour your favorite BBQ sauce on top
Cook on low for 4-5 hours
When done shred chicken with a fork and add more sauce if needed
Serve on buns with lime coleslaw (if you like)

Tuesday
Homemade pizza (using Zeek’s fresh pizza dough – $4 for a large if anyone is interested and it’s great)
Simple green salad using whatever veggies we have in the fridge

Wednesday – Ella’s family birthday dinner
Asian salmon http://www.foodnetwork.com/recipes/ina-garten/asian-grilled-salmon-recipe/index.html
Asparagus with soy and butter – http://overcocktails.blogspot.com/2009/04/asparagus-has-arrived.html
Cabbage with hot sauce (I buy cabbage already shredded at Trader Joe’s and only use fennel if I have it on hand) http://orangette.blogspot.com/2009/01/best-we-can-hope-for.html
Brown rice
Nicki in charge of dessert

Thursday – Husky game
Father-in-law babysitting all the kids. Will have dinner assembled for him to make
Easy grilled pork tenderloin:
1 pork tenderloin
¼ cup olive oil
¼ cup soy sauce
1 garlic clove chopped
1 sprig rosemary (optional)
Marinate 1-5 hours
Grill on BBQ, slice and serve
Steamed rice
Simple salad for Dennis – green beans for the kids

Friday
Parents out

Saturday
Friend’s house for dinner

  2. I squirted a lime into a bowl, added some cumin, some olive oil, s&p – whisk together.

    The I used the pre-shredded cabbage from Trader Joe’s and grated some carrot in it then tossed with the dressing – super easy!
