Dinners w/o 9/26:

Sunday – Relishing in the last decent weather w/ a BBQ menu
BBQ pork baby back ribs (we use Trader Joe’s BBQ sauce)

Cesar salad

Monday –
Salsa Verde Chicken tacos in the crockpot
Thrown a couple chicken breasts in the crock pot
Rub with cumin
Pour a jar of green salsa and add ¼ cup of water to keep things from drying out
Cook on low for 4-6 hours
Serve with your favorite topping (must do lime crema! – low fat sour cream with fresh lime juice squeezed in – mix together and serve), and warm tortillas

Tuesday –

Wednesday –
Fish fillet with black olive salsa (thanks, Lisa!)
trout, sea bass, lemon sole or tilapia fillets
Olive oil
Juice of 1 lemon
Salt & pepper

Salsa:
1 cup pitted black olives
1 cup cherry tomatoes, halved
Handful of chopped basil & dill
Juice of 1 lemon
½ red chili, seeded and chopped
¼ cup olive oil
1 lemon sliced, rind and pith removed to garnish

Marinate the filets in a mixture of olive oil, lemon juice, salt and pepper for 20 minutes. In a mixing bowl, mix the olives, tomatoes, basil, dill, lemon juice, red chili and olive oil. Set aside. Pan-fry the fish in some hot olive oil. Add the fish to the plates and top with salsa; sprinkle with extra dill and lemon slices.
Brown rice

Friday –
