Recipe:
Napa cabbage chopped
Bacon chopped
Apples sliced thin
Blue cheese crumples
Chopped walnuts

Dressing:
White wine vinegar
Olive oil
s/p
whisked together

Monday –

Tuesday – super easy – fast recipe for a crazy day. Takes 15 minutes to make. (thanks, Amy!)
Spinach & Pesto Meatball Soup
Combine one-half of a 16-ounce package frozen cooked Italian-style meatballs (Trader Joe’s has these)
2 – 14.5-ounce cans diced tomatoes with Italian herbs
1- 15-ounce can cannellini beans, 1/2 cup water
1/4 cup basil pesto
Bring to a boil, cover, and simmer 10 minutes.
Stir in 2 cups baby spinach and 1/4 cup shredded Parmesan cheese
