Dinners w/o 6/13

This week is all about using what we currently have on hand. I have scrubbed through our pantry, fridge and freezer and came up with the following menus. Trying super hard not to go to the store this week. Wish me luck!

Sunday –
Dinner Out – Cactus

Monday –
Chicken piccata (chicken in freezer/pantry items/parsley in garden) http://overcocktails.blogspot.com/2009/03/chicken-piccata-all-time-fave.html
Blasted broccoli (garlic/broccoli from our garden) http://www.epicurious.com/recipes/food/views/Roasted-Broccoli-with-Garlic-and-Red-Pepper-351031
Rice (from pantry)

Tuesday –
Homemade pizza’s (trader joe’s dough/sauce (already in the freezer) with turkey pepperoni and choice of toppings) Everyone makes their own individual pizza (kids love it)
Simple green salad (lettuce from the garden)

Wednesday –
Sole Meuniere (fish in freezer) http://www.foodnetwork.com/recipes/ina-garten/easy-sole-meuniere-recipe/index.html
Cannellini beans (canned white beans) w/ rosemary & olive oil
1. 1-2 teaspoons of olive oil in a sauté pan w/ a whole rosemary sprig (from the garden) – heat for 2 minutes
2. then add cannellini beans that have been washed/strained and warm for 3-5 minutes
3. then sprinkle with s/p and take sprig out– I am addicted. Don’t over warm the beans or they will be mushy!
Grilled flatbread (had in the freezer forever from Trader Joe’s)

Thursday –
Black bean & Tomato Quinoa http://www.epicurious.com/recipes/food/views/Black-Bean-and-Tomato-Quinoa-238939
Grilled Shrimp skewers (large raw shrimp in freezer) – Marinate for 15 minutes in olive oil, lime juice, salt/pepper. Grill then sprinkle with Mexican/cojita cheese

Friday –
Gnocchi (Pasta & Co. in the freezer)
Yummy 3 ingredient pasta sauce! Tomato sauce with onion butter http://smittenkitchen.com/2010/01/tomato-sauce-with-butter-and-onions/
Simple salad with lemon vinaigrette (1/2 amount olive oil, ½ amount fresh lemon juice, salt/pepper whisked together)

Saturday – BBQ night
Main course:

Grilled Asian salmon – I know I say this every time but seriously if you haven’t tried this – please do!
