First Weekly Dinner Post! Dinners w/o 5/9

Dinners w/o 5/9:

Sunday – Mother’s Day – Bob/kids cooking
Tuscan Lemon Chicken –  (making this for the first time – will be interesting to flatten the chicken)
Grilled panzanella salad –

Monday – Michele out
Frittata with Asparagus, Tomato and Fontina  

Tuesday –
Halibut with pesto (easiest recipe ever – ask the store to take off the skin)  (we put the halibut on the grill for more flavor and flip to grill both sides – don’t overcook!!!)
Arugula salad (recipe in above link)
Grilled ciabatta bread (cut into 1 inch slices, brush both sides with olive oil then sprinkle with salt and pepper– put directly on the BBQ and turn after 1-2 minutes)

Wednesday –
Balsamic Poached Chicken  (serve chicken sliced, not whole)
Roasted potatoes

Thursday –

Friday –
Goat Cheese-Stuffed Turkey Burgers with Roasted Red Pepper Relish  (must do the relish and I cut the lemon juice and zest in half – otherwise I think it’s too lemony)

Saturday –
